Teenage mutant ninja turtle cake

I was recently asked to make a Teenage Mutant Ninja Turtle Cake for the cutest 3 and 4 year old brothers ever! They sent pictures of some cake styles they liked so I recreated one and added a few things.
Now, I just adore ninja turtles. They were one of my favorites as a kid and my own children love them today so, of course I was excited to make a TMNT cake!

The cake itself is a milk chocolate double layer covered with tinted green (wilton gel in leaf green) vanilla buttercream and all the appliquΓ©s are edible and made from fondant.

The “heads” are rice crispies treats shaped and covered with fondant… I’m still Very new to the world of fondant. 😳
I’m a perfectionist so I see my own inadequacies in the use of fondant, but my 3 year-old says its Super-Awesome. πŸ™‚ therefore, I am satisfied.

Truffles… Almost Almond Joys

My dear husband had a sweet tooth tonight.
I have scones, chocolate chip muffins and jam bars in the freezer from a baking day gone wild πŸ™‚ but he says “I want something chocolate.”
Ok- chocolate chip muffins have chocolate of course, but he is talking chocolatey melty goodness.
I’m definitely in agreement (‘chocolate’ after all is my weakness, along with coffee and a good book) πŸ˜‰
So I head to the pantry and find I have a few unsweetened chocolate squares. Yay! Time to whip up some truffles!

We both happen to Love almond joys so that is the flavor I leaned toward with these. Chopped nuts, sprinkles, cocoa, powdered sugar, etc… all work well as a truffle coating too.

Truffle ingredients:
3 squares unsweetened chocolate
1 1/4 cups powdered sugar
1/3 cup butter
3 egg yolks
1 tsp vanilla
1 cup sweetened flaked coconut (or sprinkles, cocoa, chopped nuts, etc.. To roll your truffle in)

Begin with a medium saucepan filled 1/3 way up with water on a medium-high burner. Place chocolate squares in a small saucepan and set saucepan directly into water filled saucepan. (It should float and will distribute heat evenly to melt chocolate without scorching.)
Meanwhile, cream together butter and sugar in a medium mixing bowl.
Add in egg yolks to butter mix one at a time mixing thoroughly after each addition.
Once chocolate has melted, remove from heat and add into butter mixture along with vanilla.
Mix well and place into refrigerator to firm up enough to roll into balls. This takes about 20 minutes.
Once the mixture has firmed up, roll into 1/2 inch balls.
Distribute coconut flakes onto a piece of wax paper(easy cleanup).
Roll the chocolate balls in the coconut, coating completely.
Place the truffles on a dish and refrigerate about an hour before serving.

Moon Pie Cake!

What kind of cake do you make a lovely woman from southern Mississippi for her 78th birthday?
Why the best darn Moon Pie Cake ever, that’s what. πŸ™‚

This is a small cake, i used a square 8×8 and it made one thick layer.

For moon pie flavor I used one box (6) single decker chocolate moon pies blended up with 1 cup of milk in my blender as a base.

Ingredients:
1 cup flour
1 tsp baking powder
1/2 tsp salt
1/2 cup sugar
1 egg
1 tsp vanilla
1/4 cup cocoa powder
1/4 cup oil
Extra mini marshmallows

6 chocolate single decker moon pies
1 cup milk

Start by blending moon pies and milk in blender til smooth, set aside.

Preheat oven to 325.
Mix together flour, sugar, cocoa, baking powder and salt. Add in egg, oil and vanilla and stir together.
Pour in moon pie mixture and mix together. Add as few or as many mini marshmallows as you like.

Bake in a small cake pan for approximately 20-25 minutes or until a toothpick inserted in middle comes out clean.

I covered the cake in a thin layer of fudge icing then decorated with homemade vanilla buttercream colored with Wilton gel colors.

Texas style yeast free Beignets with quick Cafe Au Lait

I woke up this morning craving something different. Pancakes, eggs and sausage just weren’t going to make the cut.
I remembered recently hearing about the Amazing beignets from Cafe Du Monde and it got my brain going.
I think to myself, I can do That! πŸ™‚

After searching the house I realize I have no yeast… Hmmm. Well- a beignet is similar to a fried donut, which can be made without yeast fairly easily. So, here is my Texas style beignet. A little redneck recipe tweaking and it turned out delicious!

In the south/Louisiana mostly-A Beignet (pronounced “Bane-Yay”) is the perfect compliment to a good cup of Cafe Au Lait also known as coffee with milk.
Cafe au lait is usually made with 1/2 strong coffee and 1/2 milk equal parts with chicory added. Some places even make Chicory coffee. As long as you mix equal parts milk and coffee you have the right idea. Chicory adds more of a bitter note which pairs amazingly well with the sweetness of the powdered sugar on the beignets.

Here at my house I had Folger’s French Roast Coffee and whole milk.
Not exactly authentic but good and quick.
Pouring equal amounts hot freshly brewed coffee and cold milk into a small saucepan to warm up to the perfect temp was easy.

Beignet ingredients: (makes about 1 dozen)

1/2 cup water
1/2 cup milk
1 med. egg
2 tbsp sugar
1 1/2 cups flour
2 tsp baking powder
1/2 tsp salt

Vegetable oil for frying
Powdered sugar for topping

Mix together water, milk and eggs in large mixing bowl. Add in all dry ingredients and stir until just mixed.
Place enough oil in saucepan to fry (2-3 cups)
Drop large spoonfuls of batter into hot oil and fry approximately 2 minutes per side or until fluffy and nicely golden browned on each side.
Remove to paper towel lined dish and cover generously in powdered sugar.

Serve hot or cool with warm cafe au lait.

Hemi power 1970’s Muscle Car Cake

Happy birthday to my father in law Paul!
For this momentous occasion we decided a sports car from the 70’s was the way to go. So here is the hemi-powered barricuda like cake I created. πŸ™‚ It was delicious!
Classic white cake with chocolate cake Wheels and Roof topped with a lightly cream cheese flavored icing. Mmmmmm

I was in a bit of a hurry so the detail isn’t quite pristine, but it was still a hit with “Big Poppy” (as my kids call him).

Bologna Indulgence Casserole for The Hard Working Man

It’s funny that I can Look at mashed potatoes and gain a pound, whilst my husband can gobble up carb-laden foods and never think twice. πŸ™‚
Oh well. The hard-working man needs a super indulgent carb-overload every once in a while right?

So, for hubby’s miraculous metabolism I created a casserole. Not just any old casserole mind you, but one full of good ole manly favorites like bologna and cheese, corn and mashed potatoes.

As the dish finishes up cooking in the oven, my children and husband perk up, asking what is that Delicious Aroma?

Why my dear lovelies-that is the smell of our “super-unhealthy but once in a while wont hurt” Dinner.

I know I’m going to feel the need to run 5 miles after the first bite, but it is so worth it!

I shall call it “The Bologna Indulgence”

Ingredients:
3 cups prepared instant mashed potatoes (however you like them)
1 onion (diced)
1 tbsp oil
1 can whole kernel corn (drained)
1 16oz package bologna (or as much as you like sliced or chopped off of a giant roll)
1/4 block velveeta. Sliced thin
2 tsp garlic salt
Pepper

Preheat oven to 400.

Place mashed potatoes into a large Pyrex dish. Set aside.

In a large skillet SautΓ© onion in oil until transparent, add in can of corn, dash of pepper and garlic salt. Mix together and transfer into the mashed potatoes. Stir the onion corn mix into mashed potatoes well.

Using same skillet- lightly fry bologna on each side (about 1minute per side).

Layer fried bologna on top of mashed potato mix.

Top each piece of bologna with sliced velveeta.

Bake 15-20 min. Or until cheese is melted.

I also chopped up some extra bologna and cheese and added it directly into mashed potatoes. (Optional)
